Baked Giant Lima Beans – Gigantes

Ingredients:
1 lb. Giant Lima beans
1 Onion diced
4 Garlic cloves, chopped
1 Can of your favorite tomato sauce, or fresh tomato finely chopped
4 Tablespoons of fresh chopped parsley
Salt and pepper to taste
Preparation:
- Soak the beans in 6 cups of water overnight
- Discard soaking water
- Boil the beans in 8 cups of water and 1 teaspoon of salt for 90 minutes – Strain the beans and set aside. Beans should be ready to eat
- In a separate dish sauté chopped onion, garlic and stir in the tomato sauce. Add the pepper and salt
- In an oven-proof pan toss the beans and the mixture of garlic, onion and sauce until all the beans are covered with the sauce
- Pre-heat the oven at 375 and bake, uncovered, for 15 minutes
- Remove from the pan and place the beans in a nice serving platter
- Sprinkle with the fresh parsley
The beans can be served as side dish with meat or as a buffet item
