FRENCH ONION SOUP AU GRATIN SERVES 6
INGREDIENTS
- 6 medium onions cut in round slices
- 2 cloves of coarsely chopped garlic
- 4 table spoons butter
- 1 table spoon finely chopped parsley
- 1 table spoon of flour
- 1 teaspoon sugar
- ½ teaspoon black pepper
- 1 teaspoon thyme
- 4 cups chicken stock or consommé
- 1 cup of white dry wine
- ¼ cup of brandy
- 8 slices Swiss cheese
- Dry bread & Parmesan cheese for the topping
Recipe:
- Sauté the thinly sliced onions in butter until the onions are limp and golden brown (caramelized)]
- Add the garlic and the chopped parsley and stir for 2 minutes
- In a separate bowl mix the flour, sugar, black pepper, thyme and the pinch of salt
- Add mixture to the onions to create a roux and stir for an-other 2 minutes until well mixed and golden brown (medium heat)
- Add the 4 cups of consommé and simmer for 1 hour
- As you are getting ready to finish the soup add 1 cup of wine and 1 table spoon of brandy or cognac
- Pour the soup in the onion soup bowls and sprinkle with parmesan cheese
- Top each bowl with the toasted or dry bread and cover with the slices of Swiss cheese and sprinkle with some grated parmesan
- Place onion soup bowls under the broiler until cheese starts to melt and it turns to
- a nice golden brown color
- Serve with dry red wine and a green salad.
