Baked Green Squash


  • Select large squashes. Cut thick slices lengthwise.
  • Slice onions (one quarter of the weight of the squashes)
  • 1 cup chopped parsley and dill (or mint leaves)
  • 1 cup tomato sauce or sliced tomatoes
  • 1 cup of oil
  • Salt and pepper to taste
  • Some dry breadcrumbs


In a baking pan, make a layer with half the sliced inions and sprinkle with salt. Then have another layer of sliced squash and half of the parsley. Then add a layer of the rest of the onions, more salt and pepper, etc.

Pour over the tomato sauce diluted with a little water, or the fresh tomatoes, and sprinkle with salt. Top with bread crumbs, add the oil, and bake in a moderate oven for about one hour.
Serve lukewarm or cold.
